Chingudi Mahura is basically Prawns and Selected Vegetables (Desi Pariba) Curry.
The Dish has a rich History as well.
In Puri, Odisha "Chingudi Mahura" is offered to Goddess Syama Kali, Ramachandi, Kakudi Khai on the night of Nabami and on Dussehra one can get this "Bhoga" or Offering or Prasad and even if it falls on a Thursday everyone has this Prasad.
#Here I do as per my choice, this is not a bhoga recipe as I use onion tomatoes and garlic.
Recipe for Chingudi Mahura

Vegetables :-
Yam (Desialu) (is a must in Mahura)
Raw Green Banana (Kancha kadali with skin)

The main spices:-
1 tspn Whole Coriander Seeds
1/2 tspn Whole Fennel Seeds
1/2 tspn Whole Cumin Seeds
1 tspn Whole Black Peppercorns
Cinnamon 1" stick
2 Green Cardamoms
1 Bay leaf
1/2 tspn Whole Fennel Seeds
1/2 tspn Whole Cumin Seeds
1 tspn Whole Black Peppercorns
Cinnamon 1" stick
2 Green Cardamoms
1 Bay leaf
Make powder out of these Spices (you can store this powder for 1week also)
Turmeric powder -1/2 tsp
Salt - as per your taste
Ginger and Green Chilli - crushed 1 tbsp
Coconut -1/2 cup scrapped
Fried Desi Chingudi / Prawns (with shell and head) - 1 cup
Salt - as per your taste
Ginger and Green Chilli - crushed 1 tbsp
Coconut -1/2 cup scrapped

For tempering :-
Desi ghee 2 tbl sp
Red dry chilli- 3
Mustard seeds-1/2 tsp
Red dry chilli- 3
Mustard seeds-1/2 tsp
Method
Half boil the vegetables with salt and turmeric.
Then add scrapped coconut, crushed ginger, green chilli.
Cook till 80% done, then mix fried Prawns to it and cook till done.
For tempering :-
Heat Desi Ghee in a pan. Add Red Dry Chillies, Mustard Seeds.
After spluttering, mix it with cooked Vegetables and add whole Spices Powder too.
Cook for 2 more minutes.
Switch off the stove.
It is ready to serve.
Before serving garnish it with scrapped Coconut.
